How the Legend Was Born

The official birthday of the Kyiv Cake is 6 December 1956. It was on that day at the Karl Marx Confectionery Factory in Kyiv — today the Roshen Confectionery Corporation — that the first iconic nut-and-meringue layers were baked; the same layers that make the cake so impossibly light and crispy to this day. The recipe and technology were developed by Kostiantyn Petrenko, head of the biscuit workshop, who had spent years experimenting in pursuit of something truly extraordinary.

A romantic legend also exists: that confectioners once forgot to refrigerate a batch of whipped egg whites, and the next shift — to cover for their colleagues — decided to bake whatever they could from the result. But the factory itself now calls this story «a beautiful fairy tale». The truth is even more inspiring: the Kyiv Cake was born from persistent, purposeful and creative work.

An interesting detail: the original recipe used cashew nuts, which the Soviet Union received from friendly India in 1956. Over time, cashews were replaced with hazelnuts — and hazelnuts remain part of the recipe to this day.

Recognition and the Official Patent

Success came swiftly. As early as 1957, the Kyiv Cake won a bronze award, and in 1958 — a gold medal at confectionery competitions. Queues formed for the cake across the entire Soviet Union. In 1973, the recipe was officially patented: on 13 December 1973, confectioners Hanna Kurylo and Halyna Fastovets-Kalinovska received an official certificate of authorship from the USSR Council of Ministers′ State Committee for Inventions and Discoveries.

Today the Kyiv Cake is produced by the Roshen corporation — the legal successor to the Karl Marx Factory. Production still follows the «French bakery» principle: the nut-meringue bases are baked by day, and specialist teams decorate the cakes with cream through the night until 7 a.m. The signature chestnut-leaf pattern on every cake is unified — and serves as protection against counterfeit products. The original 1956 recipe remains a closely guarded secret.
